		<description>If you have a grill pan (has ridges on it) or this works well with a pan that is NOT a non-stick pan, get the pan screaming hot, place the seasoned steak on the pan and leave it alone for several minutes.  Then turn the steak over, the steak will not stick once the side has gotten a nice crust on it.  If you have to scrape it or struggle with it to turn it over leave it alone for a little while longer.  Once you turn the steak over cook until done.  The second side will not be as &quot;charred&quot; and crusty as the first side because the pan has cooled down.
This will create a lot of smoke watch your smoke detector if you have one!
I say non stick because you are not supposed to heat a non-stick pan that hot especially if there is nothing in it.</description>

		<description>Put in under the broiler on top shelf, when you touch it and it feels like the same part of your hand that is under your thumb, it is meduim rare.  I put some butter and mustard on mine to make a tasty crust.</description>

		<description>you can use a grill pan or they have griddles that have a flat side and a grill side...i have one and they are great...walmart sells them! you can use a tiny bit of liquid smoke in your marinade to give it that outdoor grill taste also!!</description>
